Hearty Sweet Potato Turkey Chili

Hearty Sweet Potato Turkey Chili

Cook Time 40 minutes

Servings 6 servings

Ingredients

2 tablespoons olive oil

1 small sweet onion (chopped)

1 lb ground turkey

3 large sweet potatoes peeled and cut into small cubes

2 t chili powder

2 t cumin

1 t paprika

½ t Black pepper

Sprinkle of salt

Sprinkle of cinnamon

28 oz can crushed tomatoes

1 can of low sodium chicken broth

(1) 15 oz can sweet whole kernel corn drained

(1) 15 oz can black beans drained

Instructions

In a large saucepan, add 2 tablespoons of olive oil.

Add onions and saute over medium heat for 3-4 minutes.

Move onions over to the side and add ground turkey. Continue cooking over medium heat for 8-9 minutes, or until turkey is almost cooked through.

Add sweet potatoes and saute for another 5 minutes.

In a bowl combine and mix seasonings: chili powder, cumin, paprika, cinnamon, salt and pepper.

Next, pour crushed tomatoes and chicken broth along with seasonings. Mix chili well and reduce heat to a simmer.

Cover pot and simmer for 25-30 minutes.

Lastly, add drained corn and black beans. Cover and simmer for an additional 10 minutes.

Make sure sweet potatoes are tender before serving. Mix well, and serve.
